Woodland Recipe #1: Hawberry Gin
Our woodlands are full of bounty and wonder, and foraging is one of the best ways to discover them. You'll find us selling some of our seasonal woodland produce at our shop and events throughout the year, but we also wanted to share the recipes with you so you can make them yourselves at home.
First off, hawberry gin. Make the most of all those hawthorn berries lighting up hedgerows at this time of year with this seasonal tipple.
Hawthorns are common woodland edge trees, and are often known as 'May Tree' because of the clouds of white flowers they produce in May. However, they also provide an abundance of red berries in September to November, which is not only a valuable source of autumnal food for wild animals, but also a highly nutritious food for humans, being rich in antioxidants.
